    Ingredients - 8 Servings Peanut Butter, Smooth - 120g (1/2 cup) Soy sauce - 59ml (1/4 cup) Rice Vinegar - 59ml (1/4 cup) Sesame Oil - 1 Tablespoon Sriracha Sauce - 2 Tablespoons Water - 59ml (1/4 cup) Ginger, minced - 1 Tablespoon Garlic, minced - 3 Cloves Brown Sugar - 2 Tablespoons Whole grain linguine /any pasta will do - 1 Box Carrot, julienne - 1 cup Cucumber - shaved using vegetable peeler - 2 Red bell pepper, thinly sliced into strips - 1 Yellow bell pepper, thinly sliced into strips - 1 Green onion, sliced - 50g (1/2 Cup) Fresh Cilantro (optional, to garnish) - 10g (1/4 cup) Peanuts, chopped - 31g (1/4 Cup) To make: 1. In a medium bowl whisk together Peanut butter, Soy sauce, Rice Vinegar, Sesame oil, Sriracha, Water, Garlic, Ginger and Brown sugar 2. Bring a large pot of lightly salted water to a boil. Cook pasta according to instructions on the box, Drain + run under cold water to cool. 3. Combine pasta with sliced vegetables. 4. Pour dressing over the pasta and vegetables and mix well. Cover and chill for an hour before serving. 5. Garnish with cilantro and peanuts. I love this recipe, itโ€™s so tasty and you can switch out ingredients very easily too. I usually use rice noodles instead of linguine (as shown in the picture) and also I enjoy this dish hot and cold. (Also I used powdered ginger now, I donโ€™t feel like it makes too much difference in the recipe)
