    **RAW Blueberry & Lime Cheesecake** **Base of Cheesecake** - 3/4 cup walnuts - 1/2 cup almonds - 1 cup dates - 1/2 tsp ground vanilla beans or extract - Pinch of salt Put all into food processor and process until well chopped up and starting to clump. Add a little water if needed to make it stick together. Into a small cake tin, or whatever you use to bake with and put into freezer/fridge while you make the filling. **Filling for Cheesecake** - 2 1/2 cup raw cashews - 1/3 cup maple syrup or honey - 2 tsp vanilla extract - 1/4 cup lime juice - 1/3 cup coconut oil melted - 2 tsp lime zest - 1 cup+ blueberries All the ingredient measurements for the taste side of things can be changed and swapped by you to suit your taste. No one is the same :)) I just like to quite soak my nuts by boiling water and tipping onto the cashews in a heatproof container. Leave for 20 minutes+ then strain. Put cashews into a processor and blitz until it’s a smooth mixture. Add maple syrup (or agave, coconut nectar! Molasses or whatever it is you use for sweetness), vanilla, lime juice and lime zest and blitz. When it’s all mixed slowly add the coconut oil. This is where the fun starts. You can mix this up, by making it 2 or 3 layers and once decided split into even amounts, putting in the Lime layer first, and into the freezer for ½ hour or until it’s set enough to add the next layer. While this is in freezer, blend the blueberries into your mixture (you can add more blueberries to make the mixture more colourful and vibrant. If you do add a little more coconut oil) When the first layer is set, put the next layer on and back into the freezer for a 1 ½ or there abouts then remove, garnish, cover and the. Into fridge for 2-3 more hours OR until you can’t wait to try it haha If you have a 3rd layer (maybe strawberries) repeat the step before. If you would like a more Limey taste add more Lime Zest to the mixture, NOT lime juice. Use left over blueberries, or strawberries to garnish and grate Lime Zest over the top and then you are done. Cut, Serve, Eat!! Enjoy and let me know how you went :))
