But instead of eggs in the dough I used about 1 1/2 tbs vital wheat gluten and a little more yeast. Used vegetable oil stick in the dough replacing the 2tbs melted butter. Also included the optional vanilla. Substituted vegetable oil sticks for 2 cups butter. Added a bit more flour to the vegetable oil sticks. Maybe 1/4 cup more. Used a potato masher to mix together the flour and vegetable oil stick before forming it into an 8x8 square. That seemed an effective way to mix it all together without incorporating too much air. I needed to chill the dough for 1 1/2-2 hours between folds to prevent the veg oil block from leaking. You can wait longer, which would probably give you better results, but I’m impatient. For the egg wash I melted some coconut oil and brushed it on the dough. I may edit this to clarify things. Just wanted to get the basic recipe posted! To make rolling the dough out easier I got a large picture frame that I lined with plastic wrap. It was about the size the dough needed to be. I put dough in the frame it ran the rolling pin over it. For the butter block I used a 8x10 pan. Made it 8x8 by rolling up foil bunching it at the end. Lined that with plastic wrap and it acted as the mold for the butter block. Pretty much all the steps don’t need to be done in one day. You can make the dough and put it in the fridge over night. Same with the folding steps. I did them all in one day because I hate waiting. The final product was surprisingly good. I was worried the extra flour in the veg oil block would effect the taste, but it didn’t. They were flaky and delicious. Hope this all makes sense.     What a result. These look amazing, Ive missed croissant and never thought to try making a vegan version. Big fan of veganising traditional recipies, cheers!
