    Simple basic of cheesecake that can just be refrigerated rather than baked. And No eggs in sight so it's totally safe for raw consumption too. It's HEAVY so this one pictured is actually a double sized slice, make it a 16 slices cake cause even then these will be the values. I made mine with Mascarpone byt Ricotta and plain Cream Cheese are also options Nutritional Values per slice (if made 16 slices) MASCARPONE 420 calories, 3.6g carbs (1g fibre), 43 fat, 4 protein RICOTTA 333 calories 3g carbs 1g fibre), 33g fat, 6g protein SIMPLE CREAM CHEESE 370 calories, 2.8g carbs (1g fibre), 38g fat, 5g protein INGREDIENTS * 500g cream cheese * 500ml double / heavy whipping cream * 1tsp lemon juice * 100g sweetener icing texture (1/2 cup) * 200g Almond Grounds * 100g salted butter * 1/2tsp pink himalayan salt * 45g brown sugar sweetener (3tbsp) INSTRUCTIONS In the smaller bowl mix almond meal, softened salted butter, salt and brown sugar substitute. Mix with hand mixer until crumbly texture achieved. transfer the crust to the springpan and press down distributing evenly, a spatula helps here. Let rest in fridge to solidify while we work on the cheesecake filling In the large bowl let's mix the cream cheese, cream and icing sweetener along with lemon juice. Mix with hand mixer for a good few minutes until well thick. get the springpan from the fridge and spread the filling on top of the crust evenly. Let rest for at least 4 hour in the fridge, or ideally overnight. Consume responsibly!
