Meal prep Sunday: Quinoa, 3 bean, and veggie salad

    My go-to work lunch thats filling and healthy. Keeps really well, tastes as good on day 4 as on day 1. Instructions: 1. Cook 3 cups dry quinoa in 5 cups veggie broth. (We use 1 broth cube) 2. Add 3-4 cans (rinsed & drained) of your favourite beans. We use Romano, Navy, and Black beans. 3. Add 1 can of corn 4. Dice 3-4 red peppers 5. Dice 1 pint of cherry tomatoes 6. Dice 1 bunch or 3/4c. of cilantro Dressing: 1. Juice 2 lemons 2. Crush 3 cloves of garlic 3. Add 2tbsp of olive oil Mix everything in a large bowl. Add chopped avocado just before eating. Super chef tip: throw some pico on top if you’re feeling fancy. Prep time: 40 minutes Yields 6 large servings Store in the fridge. Stays good unrefrigerated for 5+hrs in my lunch bag at work.

    I've been making similar meals so good I don't know I can get enough. I call it Beanoa Salad.
