For Pi-day, I made a keto buttermilk pie. But once again, the erythritol did not fully dissolve, so there is definite graininess to the texture.
How do you solve this? Extra mixing doesn’t seem to help, so it must be a temperature thing.

Crust is amazing. I mixed half the yogurt with heavy cream. I would also cut the sweetener WAY down.
