Erythritol graininess

Hey, all.

For Pi-day, I made a keto buttermilk pie. But once again, the erythritol did not fully dissolve, so there is definite graininess to the texture.

How do you solve this? Extra mixing doesn’t seem to help, so it must be a temperature thing.

Crust is amazing. I mixed half the yogurt with heavy cream. I would also cut the sweetener WAY down.

    I use a mortar and pestle to grind it into a powder then mix well Time consuming though

    Nice. Yeah, I did blend it by itself in the food processor first...will try the coffee grinder approach (or just buy the confectioners version next time). I had hoped that the 45 minutes at 350 would melt it...

    I either warm up some of whatever liquid component is going in and dissolve it or use liquid stevia.
