Keto Lemon Cream Pie! NO BAKE!

    Hi all! I'm back with another keto dessert! I made this sometime last week but didn't get time to post it. This was my favorite by far because I just love lemon flavored sweets and this is so easy to make and so yummy too! I hope you like it! Recipe below :) **Keto Lemon Cream Pie** *Ingredients* Crust: * 1 cup Almond meal/flour * 1 tbsp cocoa powder * 50 g butter (molten) * 1 tsp vanilla extract * 1 tsp Stevia/sweetener of your choice Filling : * 2 cups cream cheese * 1 cup heavy cream * 1 cup lemon juice * 1-2 tbsp Stevia/sweetener of your choice * Lemon zest for decoration *Recipe* 1. To make the crust, mix the almond meal, cocoa powder and stevia in your plate/cake tin/ dish and add the molten butter and vanilla extract to the dry mixture. (I recommend lining the plate with parchment paper so it's easy to cut off later.) 2. When the mixture is somewhat crumbly but soft, press it down and spread it evenly in your dish. Refrigerate for half an hour at least. 3. To make the filling, add the cream cheese (I made mine with a cheesecloth but store bought should work too) and heavy cream and mix well. You can whisk it a bit if you want it to be lighter and more like whipped cream, but it's not necessary if you prefer a dense filling. 4. Add the lemon juice slowly and mix well. Remember that the sour taste will become more enhanced after it has set so be careful during this step if you don't want it to become too sour. You can stop at half a cup if you like. 5. Add sweetener according to your taste but try not to add too much. 6. Now after your crust has chilled sufficiently, take it out and evenly spread the cream filling on top. 7. Optionally, zest a lemon and sprinkle some on top for decoration. :) 8. Leave it to set in the fridge overnight. I've personally found that it's easier to cut into it after at least 15 hours to a day. Enjoy your creamy lemony dessert! It lasts in the fridge for upto a week. Approximately 8-9 net carbs per serving (if you cut it into 8 slices.)
