    Colcannon is usually mashed potatoes with bacon and cabbage, sometimes kale, in our case, with plenty of cheddar! In this case, it's mashed cauliflower, due to the neutral flavour, with all the goodies added on top. Nutritional Values per portion (makes about 6/8) 429 calories, 37g fat, 5g carbs (3g fibre), 16g protein Ingredients: 2 medium cauliflower heads (about 600g) 1 small savoy cabbage (200g) 150ml double cream 80g butter 200g bacon 1tsp pink himalayan salt a pinch of black ground pepper Instructions Cut the cauliflower in smaller chucks, place in a pot with water to cover it and salt and boil for 30/40 minutes meanwhile cut the cabbage in small thin stripes place the frying pan on medium/high heat with 30g of butter, once melted and sizzling add the bacon and fry for a few minutes until well golden and crunchy, then add the cabbage, stir for a couple of minutes and then leave on low heat with a lid on for 7/8 minutes, then turn the heat off and set aside once the cauliflower is tender enough drain it, put into a large bowl, add cream, butter and pepper and start mashing. once well mixed add the cheese and mix until creamy Add the previously fried bacon and cabbage to the mashed cauliflower, save some for topping decoration, enjoy the luck of the irish!
