Creamy Cheesy Loaded Mashed Faux-tatoes

    Ingredients: 1 head cauliflower 6 to 8 cloves of garlic, peeled salt & pepper for roasting 1/3 cup sour cream 1/3 cup heavy cream or more to cream the dish 1/2 cup grated cheddar cheese 3/4 tsp salt 1/2 tsp black pepper 8 slices cooked bacon, chopped 2 Tbs dried chives Per serving (recipe divided by 5): 168 calories / 12.32g fat / 4.49g net carbs / 7.38g protein Directions: 1. Preheat oven to 350°F. 2. Cut cauliflower into large floret pieces and with the garlic, place in a large piece of heavy duty aluminum foil. Season with salt and pepper. Tightly wrap cauliflower and garlic and place in preheated 350°F oven and bake for 60 minutes. 3. While hot, put into a food processor. Add heavy cream. Pulse until the smooth and creamy. Add sour cream, cheese, salt and pepper. 4. Place the mashed faux-tatoes in a serving or mixing bowl. Add chopped bacon and chives. Mix to incorporate. 5. Serve with your favorite main course or all on its own. Garnish with a little cheese bacon and chives. Enjoy!
