Easy Coconut Green Curry with Tilapia and Zoodles (recipe in comments)

    **Ingredients** (serves 3) * 1 tbsp avocado/coconut oil * 1-2tbsp green curry paste (1 used 1.5) * 1 14oz can full fat coconut milk * 1 tbsp lemon or lime juice (I used lemon) * 2 tbsp fish sauce * 1/4 cup fresh parsley or cilantro * 0.5 tsp kosher salt, or to taste * 3 6oz tilapia filets * 3 medium zucchini * 1 red chili, optional **Instructions** * Preheat oven to 350F * Heat oil in medium sauce pan over medium heat. When hot, add curry paste and stir for about a minute. * Add in coconut milk, lemon/lime juice, fish sauce, salt, and parsley/cilantro. Bring to a boil, then taste. Adjust seasoning as needed. * Place fish filets in a glass baking dish with high sides. Pour broth over the fish- your vessel should be small enough that the fish is mostly submerged. * Bake for 15-20 minutes until fish is cooked. * While fish is baking, spiralize your zucchini. Cook over medium heat in a large pan for 4-6 minutes or until cooked to your liking (I like mine a little underdone). To serve: place zoodles at the bottom of the bowl. Using a spatula, gently lift the fish out of the pan and place it on top.
