“Keto Food Is Boring” – Baked and Breaded Chicken

    A baked chicken thigh and a parmesan-crusted chicken breast strip and two wings. Makes 4 servings: - Breading is composed of 1/2 cup almond flour (12g carbs and 6g fiber), with 1 cupful of finely crushed pork rinds (0g carbs), and 1/4 cup grated parmesan cheese. Season to taste with salt, pepper, garlic powder, red pepper flakes, seasoned salt, and parsley. Mix well. - Rub in those same seasonings thoroughly onto 4 chicken thighs, 8 chicken breast strips, and 8 wing portions. - Prepare a bowl of two finely beaten chicken eggs. Dip each piece of chicken strip and wing in egg, then place in breading over all sides, and then place on non stick pan. Arrange all pieces in a single layer. Sprinkle paprika and olive oil on the chicken thighs. - Bake at 400 deg for 35-40 min. Before removing, broil on high for a couple minutes to make them extra crispy. I pair this entree with roasted asparagus.
