    It's a bit carb-heavy, but so delicious! Ingredients: - two small onions - 2-3 cloves garlic - 1000g of winter carrots - butter (I used 100-150g for practical reasons, but more is better) - your favourite broth or stock - a few thick slices of bacon - sour cream, smetana or creme freche - bit of white pepper This makes a medium-sized pan of soup. Recipe: 1) Put the butter in the pan you want to use. On low to medium heat, let it simmer while stirring for 2-3 minutes. It'll start to foam, and after that small brown particles will appear. Be careful not to burn the butter, but do wait until it's a nice shade of brown. This will give your butter a chocolatey, caramel-like taste. 2) As soon as the butter looks done, take it off the heat and dump your garlic and onions in there. Let them simmer while you chop carrots or whatever. 3) As you chop, put a good handful of carrots into the pan. Put the pan back on the stove. Stir. Add more carrots. Stir. You don't want the butter to burn, but it adds the taste if you roast the carrots with the onions for a bit. 4) Add some broth, maybe? Stir. Add more carrots. There are a ton of carrots in this recipe. 5) Dump in the rest of the carrots. Put in the rest of your broth. Add a bit of white pepper, and salt if your stock/broth isn't the salty kind. Cook until the carrots are cooked. 6) Puree those motherfuckers. I used a cheap hand blender. 7) Realize you have forgotten about the bacon! Pop some bacon into the oven. 8) Puree the soup some more. 9) Seriously, keep blending the shit out of this soup. Try to get it as smooth as possible - it's worth the trouble. 10) Serve with a dollop of sour cream or whatever, with crispy bacon on top. This soup is amazing and creamy and smooth. The net carbs for carrots are 6,8 according to FatSecret, though, and 100g of onions is like 9g carbs. I used winter carrots, which are cheaper and taste like they have less natural sugar, but I don't know which carrots FatSecret uses and also I am not a carrot expert. If you're being strict with your carb intake, you might have to watch your portion size. I'm doing lazy keto though, so I had a huge bowl. Bon appé-fucking-tit, humans.
