    **ingredients:** * 1 boneless chicken breast * 3-4 strips of bacon (i use Applewood Smoked) * a few handfuls of fresh spinach * 2-3 garlic cloves (minced) * 2 tbsp olive oil (1 for the pan to make the filling, 1 to drizzle over the asparagus) * 1 tbsp sundried tomatoes (minced) * 1 tbsp cream cheese * 1/2 tbsp heavy cream * 1/8 cup grated Parmesan * 1/4 cup shredded mozz * bundle of asparagus * salt/pepper/garlic powder (to taste) **directions:** * preheat oven to 350β€’ and drizzle asparagus with olive oil/salt/pepper/garlic powder and bake at 350β€’ for about 30 mins. (while the chicken is cooking.) * in a small skillet, heat the olive oil and sautΓ© garlic until fragrant. add spinach, sundried tomatoes, cream cheese, and heavy cream and cook until spinach has wilted and everything gets gooey and melty. turn off the heat and set aside. * use a rolling pin (or meat tenderizer) and **lightly** pound out your chicken. (but try not to damage the structural integrity β€” we don’t want any holes!) then take a sharp knife and butterfly your chicken breast. (basically cut it in half like 75% of the way and then open it up like a book so it’s kinda heart-shaped.) * take your filling and spread it over the chicken breast. (think of it kinda like filling a taco.) then add the shredded mozz and parmesan on top. * now, VERY CAREFULLY (this is the hardest/messiest part lol) roll up the chicken and try to make it as tight as you can. (it’s fine if it’s not perfect, but the goal is to keep the filling from leaking out the sides while you cook it.) now take your bacon strips and blanket the chicken breast. (make sure the edges are as leak-free as possible!) * gently place the stuffed chicken into an air fryer and cook for ~25 mins @ 350β€’ (or until internal temp hits 165β€’) *note: you can also do this in a conventional oven but you’ll need to flip the chicken over mid-way thru to get the bacon crispy on all sides.*
