    1 Tbs coconut flour 1 1/4 Tbs butter (melted) 1/4 tsp baking powder 1 tsp sour cream (I used heavy cream) 1 Tbs cheddar cheese (pepper jack is also really good) 1 Tbs scallions (optional) Directions: Melt butter in microwave. Whisk all ingredients together and microwave for 90 seconds. Let cool for about 2 minutes, then slice in half and fry. Add any breakfast sandwich fixings you like. So good!
